Sheetcake with Apricots and Astaka Dates

 

Ingredients for a baking dish or a small baking sheet:

  • 5 apricots
  • 5 Astaka dates
  • 200 g spelt flour
  • 1 tsp baking powder
  • 80 g coconut sugar
  • 80 ml sunflower oil
  • 150 ml soy milk
  • 1 tbsp cider vinegar
  • 2 tbsp granola or nuts

 

Preparation:

  1. Preheat the oven to 180° C. Lightly grease the baking dish or sheet. Wash the apricots and divide them into quarters. Pit the Astaka dates and cut them in half.
  2. In a bowl, mix all dry ingredients. Then add the soy milk, sunflower oil, and cider vinegar and briefly mix to obtain a dough.
  3. Transfer the dough to the baking dish or sheet, spread evenly, and garnish with the apricots and dates.
  4. Bake for about 30 minutes.

 

Tip: For a crunchy topping spread 2 tablespoons of granola or nuts on the cake before baking.
